Spicy Parsnip Soup

Recipe Serves 4

  

  

1 x tablespoon olive oil

1 x Onion

1 x Clove garlic

1 teaspoon chili powder and

I teaspoon ground cumin

1 x tin butter beans 

1 vegetable stock cube dissolved in 500ml water

100ml semi skimmed milk

500g parsnips


1. Peel and chop onion

2. Peel and crush garlic

3. Peel parsnips and cut into small chunks

4. Prepare stock by dissolving stock cubes in 500ml boiling water

5. Add oil to a medium saucepan

6. Add onions and garlic and soften for a few minutes over a medium heat until they are starting to soften 

7. Add spices and stir for a few minutes

8. Add root vegetables and stir well

9. Add stock and simmer for 20 minutes until the vegetables are soft (test by spearing with a knife)

10. Open butter beans and drain

11. Add to soup and simmer for 5 more minutes

12. Remove from the heat and blend

13. Add milk if the soup is too thick

Variations;

· Use any other vegetables such as carrots, sweet potato or butternut squash

· Use chick peas or cannellini beans instead of butter beans
